Living alone but cooking for 8?

At least that's what it feels like when I open my cook books.

Living alone I seem to come across this problem A LOT. Granted I'm just a college student, and prob should be studying rather than "wasting" time in the kitchen, but I didn't get an A Procrastination 101 for nothing. ;) Besides, while others may be content with eating microwavable dinners and mac and cheese every day, I like the task of cooking up something delicious and new (maybe even healthy?) to eat. However, it's a daunting task to cook a recipe that's meant to serve a family of 4-8, and have to throw out or save left-overs (especially when they just end up spoiling in my fridge). I've found a simple to use conversion chart (for us math-impaired), and am going to try to kick those several serving sizes butts. I also am going to try out a few "cooking for one" cook books. Right now, I'm not sure where this blog will go; it may become a chronicling of my cooking-for-one hits (and misses!), or more of a guide for others like me-- single in the kitchen.
